Pecan Crisps

Ingredients

  • 1/2 cup (125 mL) butter or margarine, softened
  • 1/3 cup (75 mL) granulated sugar
  • 1 tsp. (5 mL) vanilla
  • 1/2 cup (125 mL) potato starch
  • 1/2 cup (125 mL) cornstarch
  • 1/2 cup (125 mL) chopped pecans

Instructions

  1. Preheat oven to 350°F (180°C). Beat butter, sugar and vanilla In large bowl with electric mixer until smooth and creamy. Add potato starch and cornstarch; mix well. Stir in pecans. Shape dough into 1 inch (2.5 cm) balls. Place on ungreased cookie sheet. Flatten with fork dipped in sugar. Bake 18 minutes or until lightly browned. Cool 10 minutes on cookie sheet; remove to rack to cool.
