French Vanilla Puff Pancake

Ingredients

  • 3 Tbsp. (45 mL) Becel® Buttery Taste margarine*
  • 3/4 cup (175 mL) 2% milk
  • 3/4 cup (175 mL) all-purpose flour
  • 3 large eggs
  • 1 Tbsp. (15 mL) granulated sugar
  • 2 cups (500 mL) mixed berries
  • 2 cups (500 mL) Breyers® Creamery Style™ Natural Vanilla Ice Cream
  • 1 Tbsp. (15 mL) confectioners sugar

Instructions

  1. Preheat oven to 400°F (200°C). Put Becel® Buttery Taste margarine* in oven-proof 12-inch (30 cm) skillet and place in oven.
  2. Add milk, flour, eggs, and granulated sugar to blender. Process until smooth. Pour into heated skillet. Bake until puffed and golden, about 20 minutes.
  3. Top pancake with berries and Breyers® Creamery Style™ Natural Vanilla Ice Cream; dust with confectioners sugar. Garnish, if desired, with fresh mint.
